You need to asign the .dds file texture you wish to use that is located within your game directory to your model material in maya, and then export it with that.

After doing this you'll want to create a .mat file by either loading the model into modelviewer.exe or creating a .mat file from scratch using the material editor.

Do mind this .mat file needs to use the same name as the .dds diffuse texture in order for the engine to use it properly.

If you're also looking for the general export settings, I can provide a screenshot of what I use.
Make sure you have the openCOLLADA plugin for Maya (though I'm guessing you know this if you managed to import it at all).

Mainly what you'd change from the defaults would be to enable Triangulate, disable camera and disable lights.
