I mean it'd be visible, but you would only be able to see the grass high above it getting pushed away.

You could simply hide a vicious tiger in the high grass and the players would ride on an elephant. This would result in an interesting animal-horror game. With an atmosphere like "Jaws", but it would play on extensive grasslands.
