Currently in the demo the graphics are very strange. Parts of the floor will raise/lower as I move around making it harder or impossible to see the floor or objects. A bit further in the screen has a weird issue and seems to distort and the game becomes basically unplayable.

I went to the troubleshooting guide and tried what was listed there but nothing seemed to work. Using windows vista.
Since the demo is updated to v1.0.1 make sure you have this installed:

If you buy the full game make sure to update it to v1.2 first.
I got the game update, and my drivers are up to date as well but nothing has changed.
Is the game from steam? Then try to check integrity of files. In not then reinstall it.
The game is from steam, however I am not sure what you mean by checking the integrity of the files.
If you click the Amnesia shortcut on your Steam library and take properties, it opens up new window. Choose "local files" tab and from there "Verify integrity of game cache".
Did the integrity thing and nothing changed. I'll also note that I am still playing the demo as I would prefer not to pay for it until I know there wont be a problem.

Also if it helps I found a video showing another person with the exact same problem as me.

These problems with ATI X cards are fixed after update v1.0.1 and also with the latest amd drivers. Are you sure you have the latest drivers?
does it say Catalyst 10.2? Your card is very old and so this autocheck might not work coreectly.
