What i'd like to see is somekind of more "spiritual" enemy. Not like the Grunt and brute or the water monster. Like in Through the Portal by DamnNoHTML. (To those who havent played that CS its a smoke that chases you) Also Maybe it could be a 1 hit monster which kills you instantly if you get caught.
Some kind of ooze or slime.
Perhaps a flying monster.
Empty suit of armor (perhaps the suits of armor in amnesia climb off their stands and attack you, unless you want to do something more original).
A vine creature (moving/slithering plant/strangle vine)
Personally, my preference for a custom enemy would be something that would be possible in real life, such as a serial killer. In my opinion, that's the scariest because you know that could happen.
You could make a static monster (such as one of those biting plants from mario or zelda, I can't quite remember the name) by making attack/idle animations and just setting the move speed to 0. Though I don't know if that also effects rotate speed, but my gut instinct would be no.

they have whips, which swing at you, and if youre hit, they kill you instantly. if you get their poison in your eyes, you go blind. theyre about 3 metres tall, they move about with their roots, and they have a nucleus spore head (sorta like a closed flower)
