Is it possible to record from consoles in 5.1/7.1 surround sound some way?

I thought that if you can output in TOSLINK, then you'd convert that signal into a HDMI and use the HDMI to output the audio into a capture card that supports 8 channels of audio.

Would this work or is there some sort of copy protection with Dolby Surround in TOSLINK?

I done it once, think I just found a way to do it by google.

Does anyone here use Hauppauge HD PVR?
I've found some articles about it online that say it supports 5.1 recording. However, I am interested to know that does it indeed record 5.1 or just pass it through and downgrade the recording to stereo?
