If you watch some comedy channel on YouTube or gameplay videos, why does it start out somewhat creative and then when it gets more popular, the quality drops like cows tail and pr3niz jokes start to flood in.

Do people find them funny or is it simply that the creator has said everything else and has nothing more to say?
People tend to choose the best way to get more likes and become more youtube famous. The problem is that in most cases they end up loosing the feel and purpose of their channel becoming just like-hungry.

Exactly. The "thing" they do bring them a lot of subscribers and views so they become reluctant to change the way they do their videos. And in a way that isn't so strange: Why change when what you do bring you a lot of views? Of course it's bad for the channels in the long run since they'll run out of content but it's not easy to change and maintain as many of your followers as possible.
I believe the term is called "Selling-out"
Usually they watch their mouth and what they do so they can get more subscribers.. but when they have enough subscribers they simply stop caring
