There are a couple of tutorials on how to animate or model!

What program do you use to model?

If Blender then you can find tons of tutorials on youtube, and if Maya there is also on youtube too!

But I don't know about Blender, couldn't find one.

You probably don't find that many tutorials on here because these things are universial. They should apply to mostly any game that use models, and even 3D animation and such. You can find these tutorials in many places, but since it's a rather complicated topic, it could be difficult to find structured ones made by indie people on Youtube. I suggest, if able, that you perhaps take a professional course. Most are premium however.

If you prefer using Youtube, then you can always find smaller tutorials on specific topics. If you search for Maya joint/skeleton tutorials, you'll probably find a lot of useful ones.
