The shit sewers were unbearable but the torture room where you cut open a guy's ass reeked of shit even more, so I'm not sure.

The design of the sewers was such that I could almost smell it in real life. It was like watching the film "Hunger" on Blu-ray.
The fact that the shit was still damp in the sewer levels would undoubtedly have made it worse. The curdled anal gut-slop on the Judas Cradle in the torture room was probably nice 'n' dry by the time Daniel got within sniffing distance.

To me that gave off the feeling that it would just stink like something your nose wouldn't be able to decipher, seeing how you're in the presence of an entity from another dimension.
The choir and torture rooms gave off the feeling that they'd have an overpowering smell of iron.
