I read that the game will use the Steam Workshop for mods/custom stories. Will it be possible to download and use them in the GOG version? I really hope so!

It is possible, yes, but you will need to move some files around. I can't say for sure, but I assume they would land in the /mods folder for the main game. However, if you don't have the game on Steam at all, I'm not sure if those are available for standalone download...
