For me, it's more or less just the fact that I don't feel the need to update. I will of course try it out though. I have had a couple virtual machines so far, but I'll be putting it on some laptops at work to get the real deal.

Windows 7 works just fine for me, and I doubt the issues I have with it are fixed in 10, mostly due to them relating to the very core of how Windows works. 10 is definitely an upgrade from 8 though.
I'm not a fan of Metro Live Tiles, which is part of the reason 10 (and especially 8) isn't on my wish list. I don't hate them that much to really call it a big factor though, but it's something. I also don't feel like having Cortana walk all over me.

Speaking of Cortana, will it be possible to change the voice, or is it fixed to just one, due to the character? I'm thinking of Microsoft Sam here...

Not wanting to update since 7 is all you need is understandable. Many people did that with XP when 7 was finally out. Though 7 will eventually stop being supported and then that's when you'll just have to upgrade, like XP.

As for Cortana, I'm not sure about the voice, but I'm quite sure you can't change it right away.

I do a similar thing with OS X, where I stay with 10.8 Mountain Lion instead of getting the free upgrade to 10.10 Yosemite. I will update both OSes someday, but not right off the bat when available. I'll stick with what I know until there's a good reason to change up things, in which case I'll learn the new things and most likely stick with those for a couple updates ahead. I find it more comfortable than having to learn new things often. There's also the risk of updating to a system that ends up being a failure if you do it immediately.

I've installed Windows 10 on a laptop here at work. It's pretty interesting. There are some things I wish they would've done differently though.

Some features are still a bit too "touch"-y for me, at least for a PC. They emphasize on simplicity and large, easily accessible widgets even in dock mode, but it lacks the technical information I get high off seeing. For example the "Uninstall programs" page in the PC settings. It displays "Time installed" and organizes it by "File size." That, along with the name of the program of course, is the only information. The list is also really large if compared to the "Add/Remove programs" control panel page. However, the control panel does still exist, so at least I can keep using that, although it is not the primary option, so the shortcuts you're used to (like Screen Resolution, or Personalize from the desktop context menu) are not going to put you there anymore. This makes the control panel somewhat inconvenient to get to, even if it is preferrable to the tablet-optimized PC settings app.

The "All programs" list is way bigger than Windows 7's. It makes me feel a bit awkward. I don't want to scroll too much to get my information. This list seems to fit like 10-15 items at a time, whereas 7's list can fit 30 (depending on settings).

I've noticed the computer is running faster with Windows 10, so it looks like the optimization is working. This is a low/mid tier laptop (4GB RAM, Intel graphics, 1.8 GHz AMD Processor) just to give you an impression of it.

This PC is connected to our domain, as that was something we wanted to try. It works fine.

The Edge browser does not support plugins, so that's a huge step back. I think that will ensure a lot of people stay away from it. Unless this is changed, there will be no AdBlock, Java or presumably Flash. Good thing Flash is close to retiring though, as well as Java.

One thing to remember;

When a corporation releases something to you for free, you are the product being sold.

I'll be sticking to 7 as well, at least for a while. Windows 10 has potential, and I can see it being the next big Windows OS. However, I won't trust it until it's been a while. Give them time to iron out bugs and for the public to sniff out its dark secrets.
