Frank Zappa, namely.
Can't say i've heard anything of his that is of my interest personally.

I mean really.

It takes an absolute genius to create album after album of new interesting different stuff.

I can't think of anyone that has done that.

I'd say btmi (duh), off minor, loma prieta, the dillinger escape plan and glassjaw have all done that

It is pretty rare to find, but it's one of the most amazing things ever when you do

Oh well. Still, his style was constantly evolving. Like his music or not, it certainly fits your criterion of interesting music that's never the same.
I'm sure the majority of them are still under 50 years old. (Off Minor are kinda old I think?)

I'm talking like a Bob Dylan length career. Keeping on him as an example, he wrote some of the greatest songs over his active time and also a lot of it was pretty bad.

He changed his style, took a lot of hate while doing that too.

Its kinda similar to The Dark Knight quote "You die a hero or live long enough to see yourself become the villain".

Oooh I get you now. Yeah for long term artists like that I agree it's pretty much impossible to continuously reinvent yourself and still have it work. Jacob Bannon put it pretty well, when you think of long term musicians/bands that are known for being legendary or influential in their genre they usually have 3 or 4 albums where they go all out and pull off a masterpiece and then a bunch of average to great albums that they just put out cause they love making music.

With more short term bands though that most definitely is something that I'm looking for (reinventing their sound). Most of those bands I mentioned were/have been around for about a decade each and yet like I've said they managed to change from record to record while still being good quality with each release. Obviously since most of them (except maybe dillinger and to a certain extent glassjaw) are pretty damn underground coupled with the fact that making any sort of profit in the underground scene is hard means that most of them were fairly short lived. In that sort of situation where the band pretty much knows they're not going to be putting out music for decades, then yeah I expect a certain level of change from album to album if they want to keep my attention.
Amnesia's moddb page makes me want to throw up.
